Which yogurt should I use to make this no-bake cheesecake?
- 100g of skyr (or natural Greek yogurt)
- 1 teaspoon of vanilla extract (optional)
- 6 speculoos (Lotus) cookies
- Mix the skyr (or yogurt) with the vanilla extract (you can change the vanilla for another flavoring, or leave it out).
- Place the speculoos cookies in the yogurt (either directly in the container or in a bowl). Let it chill for at least 2 hours (ideally overnight). For a creamier texture, fully submerge the cookies. If you prefer a bit of crunch, leave them slightly raised above the surface.
- And that's it! We added some crushed cookies on top for decoration, but it's optional.
You can use skyr, which is thick and creamy, giving the dessert a richer texture. If you prefer, you can use Greek yogurt. We used plain yogurt, but feel free to try the recipe with flavored yogurt for a change.
Can I substitute Lotus Biscoff cookies with other cookies in this viral cheesecake recipe?
Yes, you can easily substitute Lotus Biscoff biscuits: the important thing is that the biscuit is dry and firm so that, when in contact with thick yogurt (skyr or Greek yogurt), it softens without falling apart and helps to create that cheesecake-like texture. In viral versions, it's often used with butter biscuits, digestive biscuits, shortbread, graham crackers, and even Oreos.
What is the ideal resting time for this cheesecake?
The cheesecake should rest for at least 2 hours in the refrigerator to allow the cookies to soften; although ideally it should be left overnight in the fridge.

To personalize the flavor (toppings and extras), this is where the hack becomes addictive: the most typical thing on social media is to top it with fresh fruit (strawberries, raspberries, blueberries, mango), jam or red fruit coulis, a drizzle of honey or maple syrup, and a citrus touch with lemon zest; if you want to go for a more "café dessert" profile, try speculoos cream, melted chocolate, Nutella or peanut/almond butter in thin threads; and if you fancy something more modern, sprinkle cocoa or matcha, add crushed cookies on top to add contrast, or mix a little vanilla into the yogurt before adding the cookies.
