Focaccia in the Ankarsrum mixer

One of the most popular breads in my house: its crust is crispy and fragrant, and inside, it has a light and airy crumb that's delicious. Would you like to try making this focaccia?

Ingredients · Servings 4
  • 360 g water at room temperature (—or slightly warm—)
  • 10 g fresh yeast
  • 15g of extra virgin olive oil
  • 450 g strong flour (or bread flour)
  • 8 g of salt
  • 1 tablespoon of extra virgin olive oil
  • Flaky salt
Method · 26 h 30 min
  1. Put the water, yeast and oil in the mixer and mix for 1 minute at high speed.
  2. Add the flour and salt and mix for 5 minutes at low speed.
  3. Stop the machine for 5 minutes.
  4. Knead again for another 5 minutes.
  5. Stop the machine and let the dough rest inside the stainless steel bowl for another 5 minutes.
  6. Pour extra virgin olive oil (generously) into a flat, oblong Pyrex baking dish, coating the entire surface well. Place the dough in it and cover it with oiled plastic wrap and let it rest for 20 minutes.
  7. After this time, oil your hands and fold the dough as shown in the video. Cover the dough with plastic wrap and let it rest for another 20 minutes.
  8. Repeat these folds 3 more times. Let the dough rest for 20 minutes after the last fold, then put it in the refrigerator until the next day—or it can even be refrigerated for a total of 24 hours.
  9. Place baking paper brushed with extra virgin olive oil on a baking tray.
  10. Turn the dough out onto the baking sheet. Let it rest for 20 minutes. After this time, with your hands lightly oiled, gently shape it into a rectangle without handling it too much: you'll see it's very easy to shape. Cover the dough and let it rest again for 25 to 30 minutes.
  11. Preheat the oven to 250ºC, top and bottom heat.
  12. Drizzle a little oil and sprinkle some salt flakes over the dough, then press your fingers into it, as you see in the video. Now's the time to add other ingredients if you like: garlic, herbs, cherry tomatoes, black olives...
  13. Lower the oven to 230ºC and bake for 25 minutes or until you see that it has a beautiful golden color.
