Steamed eggs Chinese style – the recipe for silky eggs with just two ingredients!

Materials

  • 2 eggs
  • 200 ml of broth (vegetable or meat)
  • 1 teaspoon of sesame oil
  • 1 teaspoon of soy sauce
  • 1/2 teaspoon of sesame seeds
  • 1/2 teaspoon of Chinese hot sauce (optional)
  • chives (chopped)
Method · 25 min
  1. Beat the eggs. Add the broth and mix again.
  2. Pour into a bowl and pass through a fine sieve. Remove any bubbles from the surface with a spoon and cover with cling film.
  3. Bring water to a boil in a large pan. Place a steamer rack over the bowl (the water should not reach the rack). Place the bowl on top, cover, and steam for 15-20 minutes.
  4. Remove the film and, on the surface of the set egg, make shallow grid-like cuts with a knife.
  5. Dress with sesame oil and soy sauce. If desired, finish with sesame seeds, hot sauce, and chives.

What broth is best for steamed eggs?

You can use whatever you have on hand. Vegetable broth works really well and is the easiest. If you want a more rounded flavor, try chicken broth. And if you fancy adding a more Asian touch, dashi (Japanese broth) is fantastic and adds depth without overpowering the egg.

How do I get it nice and smooth and without bubbles?

First, don't forget to strain the mixture through a sieve. Then, thoroughly remove any small bubbles that may have risen to the surface: if you leave them, they'll remain after cooking and the top won't be smooth. Cover the bowl tightly with plastic wrap. It shouldn't be punctured or opened during cooking; otherwise, bubbles will form on the surface.

How can I steam it if I don't have a steamer?

No problem: a large frying pan with a lid will do. Bring some water to a boil and place a rack or some other support inside to elevate the bowl (a metal plating ring, for example). The idea is that the bowl doesn't touch the water, only receives the steam. If you have a bamboo steamer, that works perfectly too.
