Fried eggs folded with melted mozzarella, honey and a spicy touch
Materials
- 1 teaspoon of chili oil
- 1 teaspoon of honey
- 4 tablespoons of grated mozzarella
- 2 eggs
- 1/2 chopped spring onion or chives
- 1/2 teaspoon of sesame seeds
- Pour the chili oil into a hot pan over medium-low heat. Add the honey and spread it evenly over the surface.
- Cover with the grated mozzarella. Let it melt a little and then add the eggs.
- Cover the pan and cook for about 5 minutes. Keep an eye on them, as the eggs may cook faster depending on the heat.
- Add the chopped spring onion or, if you prefer, some chives.
- When the eggs are cooked to your liking, fold the whole thing in half and serve.
- Finish with sesame seeds and a little more spring onion on top. And that's it!

How to get these sweet and salty eggs just right?
The key is to cook the eggs over medium-low heat and cover the pan so the whites cook without overcooking the yolks. It's also important to keep an eye on the mozzarella: it should melt and coat the eggs, but without releasing too much water or sticking to the bottom of the pan. The cooking time can vary slightly depending on the pan and the heat, so it's worth keeping an eye on it from the fourth minute onwards.
How to customize this recipe?
This recipe is easy to adapt without losing its charm. You can use fresh spring onion instead of chives, adjust the amount of honey or chili oil to taste, or finish it with different seeds, such as nigella or poppy seeds. You can also add more body with some avocado, a few leafy greens, or even a touch of Parmesan, always making sure not to overpower the contrast between the sweetness, the spiciness, and the melted cheese.
Which hot pepper oil works best in this recipe?
You can use spicy olive oil or any other chili-infused oil, depending on your spice tolerance. For this recipe, Lao Gan Ma Chili seasoning works especially well and is readily available in Asian grocery stores. You can also use regular olive oil and keep the rest of the recipe the same. The recipe will lose that final contrast, but it will still work beautifully thanks to the combination of egg, honey, and melted cheese.
Can this folded omelet of fried eggs be prepared in advance?
It's not ideal, because they're much better freshly made. The melted mozzarella and the egg yolk lose some of their appeal when you wait.
What to serve with these folded fried eggs?
They go really well with toast, sourdough bread, or a bagel, which help soak up the yolk and melted cheese. You can also serve them with avocado, dressed tomatoes, or a light salad.
