- Lemon juice of about half a small lemon 20 g
- Fresh mint leaves, whole, for decoration
- To make the strawberry and muscatel aspic, start by cleaning the fruit: thoroughly wash the strawberries under running water, remove the stems, and cut them into small, evenly sized pieces. Once ready, divide the strawberries into four individual molds, trying to evenly distribute them for a uniform appearance.
- Take the gelatin sheets and place them in a bowl; if necessary, tear them into pieces to make them fit comfortably. Cover them with plenty of cold water and let them sit for about 10 minutes until soft. Then, squeeze them carefully and pour them into a container with 50 g of warmed Muscat wine. Stir well with a teaspoon until the gelatin is completely dissolved, making sure there are no residues.
- Pour the gelatin mixture into a larger bowl and add the remaining Muscat wine, water, lemon juice, and sugar. Stir everything together thoroughly: this step is essential for blending the flavors and ensuring the sugar is completely dissolved in the liquid.
- Divide the Moscato syrup between the four molds containing the strawberries. Make sure to completely cover the fruit for a perfect finish. Place the molds on a stable tray for easy handling and refrigerate for about 3-4 hours. This resting time is essential for the aspic to gel properly.
- Once the gelling process is complete, remove your aspic from the refrigerator. To unmold them perfectly without breaking them, use this trick: gently cut the molds with a pair of scissors. This way, you can remove them effortlessly and invert them directly onto serving plates.
