Grandma's fluffy softies

Ingredients · Servings 4
  • flour - about 800 to 1 kg
  • yogurt - 1 bucket
  • bicarbonate of soda - 1 tsp.
  • yeast - 7 g (1 packet)
  • eggs - 1 pc.
  • sugar - 1 tsp.
  • salt - 1 tbsp.
  • fresh milk - 200 ml
  • water - 100 ml
  • oil - 40 ml
Method · 50 min
  1. Dissolve the yeast in 200 ml of warmed milk along with 1 tsp. sugar and 3 tbsp. flour. Mix well and let it double in size for about 20 minutes.
  2. In a large bowl, sift the flour together with the salt.
  3. In another bowl, pour the yogurt, adding the baking soda and whisking until foamy. Add the egg, water and oil. Stir until smooth.
  4. Sift the flour and add it gradually, stirring gently with a wooden spoon until a dough begins to form.
  5. Sprinkle the counter with flour and pour the mixture from the bowl. Knead until you get a soft dough.
  6. Grease a deep bowl and transfer the finished dough ball into it. Let it rise for 1 hour in a warm place, covered with cling film.
  7. Heat more oil in a deep frying pan.
  8. Divide the finished dough into balls for our mekitsi. Brush each one with oil and gently stretch with your hands so that they don't break.
  9. We fry grandma's mekitsi until golden. You get the fluffiest mekitsi, just like grandma's!
  10. Grandma's fluffy cookies can be eaten with powdered sugar, jam, chocolate, or cheese.
