Reduced-Sugar Apple Crumble

  • 1 3/4 lb (800 g) Cortland apples, peeled, cored and diced (about 4 medium apples)
  • 1 3/4 lb (800 g) McIntosh apples, peeled, cored and diced (about 5 medium apples)
  • 1/4 cup (55 g) brown sugar
  • 3/4 cup (115 g) unbleached all-purpose flour
  • 1/2 cup (115 g) unsalted butter, softened
  • 1 cup (100 g) quick-cooking oats
  • 1/2 cup (105 g) brown sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
Method · 1 h 35 min
  1. With the rack in the middle position, preheat the oven to 350°F (180°C). Butter an 8-inch (20 cm) square baking dish.
  2. In a bowl, combine both types of apples with the brown sugar. Spread out in the baking dish. Bake for 30 minutes.
  3. Meanwhile, in the same bowl, combine all of the ingredients just until the dry ingredients are moistened and the mixture comes together when pressed between your fingertips.
  4. Remove the baking dish from the oven and stir the apples. Cover the apples with the crumble. Continue to bake for 35 minutes or until the crumble is golden and the apples are cooked through. Let cool for 1 hour before serving.
