Very soft gingerbread cookies

Ingredients · Servings 8
- eggs - 1 pc.
- honey - 50 g
- sugar - 50 g
- soda - 1/2 tsp.
- butter - 60 g
- flour - 200 g
- vanilla sugar - 10 g
- baking powder - 1 tsp.
- ginger powder - 1 tsp.
- cinnamon - 1 tsp.
Method · 40 min
- In a saucepan on the stove, place the egg, sugar, honey, vanilla sugar and butter. Mix everything very well on medium heat. The mixture should not boil, but only warm up and melt the butter and sugar crystals. Once this happens, remove from the heat and add the soda and baking powder.
- Sift the flour with the ginger and cinnamon and add the mixture to it. Stir with a spoon, then knead with your hands to form a soft dough. Add an extra spoon or two of flour if necessary. Shape the dough into a ball, cover with cling film and refrigerate for half an hour.
- Roll out the dough well to about half a centimeter thick. Cut out the gingerbread men with suitable cutters. You can dip the cutters in cinnamon or cocoa.
- Arrange on a baking sheet lined with baking paper, leaving space between them. Bake these very soft gingerbread cookies at 180 degrees in a preheated oven for 10 minutes. Enjoy!
