Fluffy zucchini and onion casserole in the oven

- zucchini - 700 g
- onion - 2 heads
- eggs - 4 pcs.
- yogurt - 200 g
- cheese - 150 g
- yellow cheese - 120 g
- brashno - 3 tbsp.
- baking powder - 1 tsp.
- oil - 3 tbsp.
- salt - 1 tsp.
- black pepper - 1/3 tsp.
- fresh basil - 2 sprigs

- Wash and coarsely grate the zucchini. Sprinkle lightly with salt and leave for 10 minutes to remove excess water.
- Then squeeze them well with your hands or through a clean cloth. This step is important because it helps the zucchini casserole stay fluffy and not watery.
- Peel the onion and cut into thin half-moons or finely, as desired. Heat 1 tbsp oil in a frying pan and fry the onion over medium heat for 5 minutes, until soft and slightly sweet. It does not need to brown very much.
- In a large bowl, beat the eggs with the yogurt. Add the flour and baking powder, stirring until the mixture is smooth and free of dry lumps.
- Add the crumbled cheese, half the grated yellow cheese, black pepper, drained zucchini, and softened onion to the egg mixture.
- Grease a baking dish with the remaining oil. Pour the mixture in and spread it evenly, without pressing too hard to maintain the airy structure. Sprinkle the remaining cheese on top, which forms an appetizing golden crust when baked.
- Bake the zucchini and onion casserole in a preheated oven at 180 degrees for 35-40 minutes. It is ready when the surface is browned, the middle is firm, and when gently shaken, the mixture is no longer liquid.
- After removing from the oven, let the dish rest for 10 minutes. This makes it easier to cut and the flavor balances out.
- Serve warm or slightly chilled, with fresh basil on top. Leftovers can be stored in a covered container in the refrigerator for up to 2 days and reheated in the oven or in a frying pan.
