We suggest you make and fall in love with this pumpkin casserole with cottage cheese. This casserole is best made with butternut squash—the kind with an elongated, pear-shaped shape: the flesh of this fruit has a particularly sweet taste and aroma. Incidentally, the dish is not only delicious but also very healthy, as pumpkin is rich in provitamin A, which is easily absorbed when combined with the fats found in cottage cheese and eggs.

Many of us remember cottage cheese casserole with raisins, generously topped with sour cream or condensed milk, from childhood: this dish was often served for breakfast in kindergarten. And everyone, or almost everyone, loved it! In any case, it was much more appealing than boring porridge. The children—that is, us—have grown up, but our love for cottage cheese casserole remains. Fortunately, today we can find delicious, high-quality cottage cheese for making it, which makes the dish incredibly tender and fluffy. So it would be a shame not to take advantage of the opportunity and treat your loved ones to cottage cheese casserole with raisins, the aroma of which evokes the warmest memories of a time when the trees were tall and life seemed cloudless.

Zucchini casserole with cheese and tomatoes is a very popular dish in the south of France. It's usually served as an appetizer. The filling can be either pale-skinned zucchini, its brightly colored cousins, or even pattypan squash, along with ripe tomatoes and hard cheese. If you're planning to make this casserole for dinner, make a second, smaller one for breakfast. It'll only taste better the next day.

Eggplant casserole with tomatoes is a riff on baked eggplant. Unlike the mono-dish version, however, this casserole can be eaten cold, is more filling, and looks quite impressive (especially if the layers are carefully and evenly arranged). If desired, you can replace the tomatoes with colorful bell peppers, and add a little finely grated soft cheese to the cottage cheese. Replace the nutmeg with red paprika, and the basil with fresh parsley.
