Soft sugar pie: the best recipe

Can the pie be prepared in advance and reheated without the sugar hardening or becoming grainy?

Ingredients · Servings 8 people
  • 250 g flour
  • 1 sachet of baker's yeast
  • 25g caster sugar
  • 25 g milk
  • 100g margarine or butter
  • 2 egg units
  • 1 egg yolk
  • 25 g milk
  • 125g caster sugar
  • 5 small butter nuts
Method · 15 min
  1. In a mixing bowl, combine the flour, sugar, and yeast.
  2. Meanwhile, melt the margarine with the milk in the microwave for 30 seconds.
  3. Incorporate the melted butter and mix.
  4. Add the eggs one by one to obtain a fairly soft ball of dough.
  5. Place the dough on baking paper and spread it into a disc of about 30 cm using the back of a spoon. Let it rest for 2 hours at about 25°C.
  6. Mix the egg yolk with the milk and spread it over the pastry. Then, sprinkle with sugar and dot with 5 small pieces of butter. Bake for 25 minutes at 200°C (400°F).

Yes, you can prepare the tart in advance and store it at room temperature. To reheat it without the sugar hardening, gently warm it in the oven at 150°C (300°F) for about 10 minutes. This will allow the sugar to melt slightly again without altering the texture of the filling. Avoid using a microwave, as this could make the filling too runny.
