Smoked salmon verrines with ricotta, chives and dill

- 1 slice of smoked salmon
- 2 tbsp fresh cream
- 3 tbsp ricotta
- 20 sprigs of chives
- 5 branches aneth
- 1/4 unit lemon juice

- Slice the smoked salmon into strips, then into small rectangles. Finely chop the chives and dill.
- In a bowl, combine the lemon juice, ricotta, crème fraîche, and herbs. Add a little pepper if desired. Add the smoked salmon, reserving some for garnish. Mix well.
- Using a piping bag fitted with a wide nozzle, fill the cocktail glasses with the mixture. This is what gives the verrine its elegant appearance. Then finish with two rectangles of smoked salmon and a sprig of dill. Serve.
Yes, you can substitute ricotta with a soft spreadable cheese, such as Philadelphia or mascarpone, but the texture may be a bit richer and creamier. If you prefer a lighter texture, you can also use well-drained fromage blanc.
