Real spring rolls
How to prevent the filling from leaking out of the roll when rolling or eating?
- 12 peeled shrimp
- 100 g cooked pork fillet
- 75g raw soybean sprouts
- 8 lettuce leaves
- 1 carrot
- 8 rice cakes
- 50g rice vermicelli
- 12 mint leaves

- Wash the bean sprouts. Peel and rinse the carrot, then cut it into very thin sticks. Cut the pork into strips.
- Bring a large pot of salted water to a boil. Add the soybeans and carrot sticks. Simmer for 2 minutes. Drain and let cool.
- Bring another pot of salted water to a boil. Add the rice vermicelli. Turn off the heat, cover, and let stand for 5 minutes. Rinse the vermicelli under cold water, drain, and let cool.
- Gently mix the vermicelli, pork strips, carrot sticks and soy.
- Moisten a rice paper wrapper by dipping it in a bowl of cold water and lay it on a clean kitchen towel. Place a lettuce leaf and then some filling in the center. Add 3 mint leaves and 3 shrimp. Fold the edges of the wrapper over to form a small roll, pressing firmly. Be careful not to tear the wrapper.
- Repeat the process until all the ingredients are used up. Place a damp towel over the rolls until ready to serve. Prepare the sauce by mixing the fish sauce, sugar, coriander, and 2 tablespoons of water.
To prevent the filling from escaping, be careful not to overfill the rice paper. Leave a small space around the filling. When rolling, start by folding the edges over to secure the filling, then roll firmly but not too tightly. If needed, you can lightly moisten the edges of the rice paper to better seal the rolls.
Can the rolls be prepared in advance, and how can they be stored without drying out?
Yes, you can prepare spring rolls in advance. To store them, cover them with plastic wrap or a damp cloth to prevent them from drying out. Then place them in the refrigerator, but it's best to eat them within 24 hours to maintain the freshness of the vegetables and the texture of the rice paper. You can also place them between lettuce leaves to separate them and prevent them from sticking together.
