Raspberry Tiramisu: The Best Recipe

Raspberry tiramisu is the fruity and light version of the classic coffee tiramisu. With its smooth mascarpone, pink Reims biscuits, and tangy raspberries, this refreshing dessert is easy to assemble and delights everyone with a sweet tooth. Perfect for vegetarians, it brings a real touch of freshness to your table.

Ingredients · Servings 4 people
  • 2 eggs
  • 250 g mascarpone
  • 70 g sucre roux
  • 1 sachet of vanilla sugar
  • 100g raspberry
  • 10 pink Reims biscuits
  • 1 can raspberry coulis
Method · 15 min
  1. Separate the egg whites from the yolks. Mix the yolks, sugar and vanilla sugar.
  2. Add the Mascarpone while whisking.
  3. Whisk the egg whites until stiff peaks form and gently fold them into the previous mixture using a spatula.
  4. Line the verrines with biscuits. Cover with coulis and a few raspberries, then spread a layer of cream, egg, sugar, and Mascarpone on top.
  5. Alternate layers of biscuits, coulis, raspberries and cream. Finish with a layer of cream.
  6. Sprinkle with flaked almonds and a raspberry for decoration. Let it set for at least 3 or 4 hours in the refrigerator.
