100% Homemade Strawberry Tart

- 250 g flour
- 150g soft butter
- 120 g sucre
- 1 egg
- 1 pinch of salt
- 500g strawberries
- 120 g sucre
- 50g flour
- ½ liter milk
- 4 eggs
- 1 vanilla bean
Method · 30 min
- Sift the flour onto the work surface, make a well and add the softened butter in small cubes.
- Separately, mix the egg with the sugar and salt. Incorporate this mixture into the dough and knead with your fingers until a smooth, no-stick ball forms. Cover the ball with a tea towel and let it rest in a bowl for at least 1 hour.
- Boil the milk. Mix the eggs, sugar, flour, and vanilla in a bowl.
- Gradually pour the boiling milk over the mixture. Pour this mixture into the saucepan and cook over low heat. The cream will thicken as it cooks. Remove from the heat when it is completely thick.
- For assembly: blind bake the pie crust in a preheated oven at 180°C (thermostat 6) for 5 minutes, then for about 15 minutes at 150°C (thermostat 5).
- Allow the tart base to cool. Then generously fill it with pastry cream and arrange the strawberries on top attractively.
