Banana Oatmeal Pancakes

Pancakes, we could eat them every day. We’ve added these banana oatmeal pancakes with kiwi back to our favorites list. Because oh, they are so delicious. They are healthy pancakes with a delicious kiwi topping for some extra vitamins.

Ingredients · Servings 6
  • 1 space
  • 2 eggs
  • 100 ml oat milk
  • 100 g oatmeal
  • 2 Zespri kiwi's green
  • 1 tsp baking powder
  • 2 tbsp coconut yogurt (or regular yogurt)
  • 1 tbsp coconut flakes
  • Pinch of salt
Method · 15 min
  1. Mash the banana with the eggs until smooth.
  2. Add the oats, baking powder, and a pinch of salt, and fold this into the batter. Mix in the oat milk.
  3. Heat a frying pan with some neutral oil. Divide the batter into small pancakes and let both sides turn golden brown.
  4. Slice the kiwi and distribute the slices over the banana oatmeal pancakes. Garnish with 2 tablespoons of coconut yogurt and some toasted coconut (fry briefly in a frying pan).
