Healthy birth treat: banana bread with sprinkles

Ingredients for 20 people

  • 200 g spelt flour
  • 3 eggs (size L)
  • 375 g banana (ripe)
  • 60 g dates
  • 40 g dark chocolate
  • 3 tablespoons of sugared mice
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • Pinch of salt
  • 1 brownievorm
Method · 45 min
  1. Preheat the oven to 175 degrees (top and bottom heat).
  2. Puree the bananas and dates until smooth using an immersion blender. If you don't have an immersion blender, mash the bananas with a fork and finely chop the dates with a knife.
  3. Mix the eggs in. Add the flour, baking powder, cinnamon, and a pinch of salt, and fold this into the batter.
  4. Pour the batter into a greased brownie pan. Bake the banana bread in the preheated oven for 30–35 minutes until golden brown. The banana bread is done when you insert a toothpick and it comes out clean and dry.
  5. Melt the chocolate in a bain-marie. Cut the banana bread into cubes and drizzle the chocolate over them. Decorate the banana bread cubes with the sprinkles.
