Mexican salad with tortilla croutons

Could you use some salad inspiration? Then this Mexican salad might be for you. It is a delicious and filling meal salad, thanks to the chicken, the beans, and the homemade tortilla croutons. And that might sound like a lot of work, but it’s actually not that bad.

Ingredients · Servings 4
  • 2 st. baby Romaine sla
  • 2 chicken fillets
  • 250 g cherry tomatoes
  • 300 g corn (canned)
  • 300 g kidney beans (canned)
  • 1 rode ui
  • 1 lime
  • 4 generous tablespoons of guacamole (recipe)
  • 2 tsp taco seasoning
  • Salt and pepper
  • Olive oil
  • 2 wraps
  • Pinch of smoked paprika
  • Pinch of salt
  • Olive oil
Method · 20 min
  1. Coat the chicken fillets with some olive oil, salt, and taco seasoning. Grill the chicken fillets on both sides until golden brown and cooked through.
  2. Preheat the oven to 180 degrees (fan-assisted). Brush the wraps with a little olive oil and season them with some salt and smoked paprika. Cut the wraps into wedges and place them on a baking sheet lined with parchment paper. Toast the tortilla croutons until golden brown, about 5 minutes.
  3. Cut and wash the lettuce. Season with some lime juice, olive oil, salt, and pepper. Divide the lettuce among 4 plates.
  4. Halve the cherry tomatoes, slice the red onion into rings, and rinse the corn and kidney beans under the tap. Distribute this over the salad.
  5. Cut the chicken into strips and distribute them over the salad along with the tortilla croutons.
  6. Garnish the Mexican salad with a generous tablespoon of guacamole and optionally some fresh cilantro.

I am not a huge meat eater myself. I enjoy a piece, but I don't need very much. However, if you are a bigger eater, feel free to take a whole chicken breast per person. Actually, this applies to all my recipes. The quantities are somewhat up to preference. When I cook for 4 people, I always base my recipes on 2 adults and 2 children. For some, this is more than enough, and for others, it is too little, so feel free to play around with that yourself.
