Chopped Chicken Caesar Wrap (Inspired by Vinny’s Cafe)

This chopped chicken Caesar wrap is built differently. Instead of layering ingredients and hoping every bite holds together, everything is finely chopped and mixed first so each bite delivers chicken, romaine, dressing, crunch, and salt all at once.

Ingredients
  • grilled chicken breast or tenderloins (finely chopped)
  • 1 large flour tortilla (my flour tortilla recipe)
  • romaine lettuce (chopped)
  • caesar dressing
  • parmesan cheese
  • croutons
  • potato chips (Vinny's Cafe uses Zapp's Voodoo Chipps)
  • optional: cooked bacon
Method
  1. Combine the filling: In a large bowl add chopped chicken, romaine, Parmesan, croutons, bacon if using, and Caesar dressing.
  2. Chop: Using a pizza cutter, repeatedly chop through the mixture until finely cut and evenly combined.
  3. Add chips: Add potato chips and lightly chop and press into the mixture until slightly broken down but still crunchy.
  4. Warm tortilla: Warm tortilla in a dry pan or microwave until soft and pliable.
  5. Roll: Spoon filling into the center of the tortilla keeping it compact. Fold in the sides and roll tightly from the bottom up.
  6. Serve: Slice in half and serve immediately.

Storage & Make Ahead

Make ahead: The chopped filling can be prepped a few hours ahead and kept refrigerated — but wait to add the potato chips until just before assembling to preserve their crunch. Assemble wraps just before serving for best texture.

Storage: Assembled wraps are best eaten immediately. If you need to store them, wrap tightly in foil or plastic wrap and refrigerate for up to 1 day — the chips will soften but the wrap will still taste great.
