Farfalle with broccoli, chicken, and cheese sauce

- 350 g chicken thigh fillets
- 1 large onion
- 500 gr broccoli
- 400g farfalle pasta
- 200 ml whipping cream
- 150 gr gorgonzola
- 80 g almonds
- 3 sprigs of fresh basil
- Salt and pepper
- Olive oil

- Pat the chicken thigh fillets dry with a piece of kitchen paper. Season both sides generously with salt and pepper. Cut the chicken thigh fillets into strips.
- Peel the onion and chop finely. Cut the broccoli into florets. Bring a pan of generously salted water to a boil. Add the farfalle and broccoli to the pan and cook for 9-10 minutes until the pasta is al dente.
- Toast the almonds in a dry frying pan until golden brown. Transfer them to a small plate.
- Heat a splash of olive oil in a frying pan and brown the chicken strips. Remove them from the pan and place them on a plate.
- Add some extra olive oil to the pan if needed and sauté the onion. Add the cream and gorgonzola. Stir well until a nice, smooth sauce forms. Season to taste with salt and pepper. Return the chicken to the pan and heat through for another minute.
- Drain the pasta and broccoli. Divide it among the plates. Spoon the sauce and chicken over the pasta, and garnish with almonds and fresh basil leaves.
