Oven pasta with creamy cheese sauce

There is a fun food series on Netflix called “Somebody Feed Phil”; if you’ve ever seen it, you’ll totally understand what I mean. But after watching the series, I immediately thought of this recipe for this oven pasta with cheese sauce.

Ingredients · Servings 4
  • 350 gr macaroni
  • 200 g spinach
  • 1 yellow bell pepper
  • 1 red bell pepper
  • 1 ui
  • 225 gr chorizo
  • 400 g canned pomodorini tomatoes
  • 3-4 sprigs of basil
  • 1 tbsp olive oil
  • 25 g flour
  • 25 g butter
  • 250 ml whole milk
  • 75 g grated mature cheese
  • Salt and pepper
Method · 40 min
  1. Preheat the oven to 180 degrees (electric), 160 degrees (fan-assisted).
  2. Cook the macaroni in plenty of salted water for 8-10 minutes until the pasta is al dente. Drain and rinse with cold water; this rinses off the starch and prevents the pasta from sticking together. Let drain well and set aside.
  3. Cut both bell peppers into strips and the chorizo ​​into pieces. Finely chop the onion and sauté in a frying pan with 1 tablespoon of olive oil until translucent. Add the bell pepper strips and chorizo ​​pieces and cook over medium heat for 7-8 minutes, until the peppers have become nice and sweet and soft and the chorizo ​​has a crispy edge.
  4. Pour in the can of tomatoes and let it simmer for a while. Finally, stir the spinach into the sauce until all the leaves have wilted. Remove from the heat and let stand for a moment until you have made the cheese sauce.
  5. Melt the butter in a small saucepan. Add the flour all at once and stir vigorously for 2 minutes. Then carefully pour the milk into the saucepan, little by little, stirring well each time. This way, you won't get lumps. Once you have added all the milk, bring the sauce back to a boil and simmer until it thickens nicely. Season well with salt, stir in the cheese, and taste carefully to add more salt and pepper if necessary.
  6. Toss the pasta with the chorizo ​​and tomato sauce. Transfer everything to an oven dish and stir in the cheese sauce. Then place in the preheated oven for 20-30 minutes, or until the cheese is bubbling nicely. Serve the oven pasta immediately and garnish with some basil leaves.
