Flemish beef stew with beer

- 1 kg of round rib
- 2 onions
- 3 stalks of celery
- 300 g green beans
- 750 g baby potatoes
- 3 sprigs of rosemary
- 3 tablespoons coarse mustard
- 3 tablespoons apple syrup
- 200 ml beef broth
- 200 ml brown beer (1 bottle)
Method · 3 h 20 min
- Pat the meat dry with a paper towel. Sprinkle generously with salt and pepper and spread with apple syrup and mustard. Cut the meat into large chunks.
- Heat olive oil and butter in a casserole dish and brown the meat on all sides. Do this in several batches if necessary. Remove the meat from the pan; do not clean the pan in between.
- Peel the onions and chop finely. Clean the celery and cut into rings. Clean the green beans. If necessary, heat some extra olive oil in the pan and add the onion and celery, fry for 2-3 minutes over low heat.
- Return the meat to the pan and pour in the beer and stock. Ensure the meat is just covered. Insert the rosemary sprigs and bring to a boil. Then reduce the heat to the lowest possible setting, cover the pan, and let the meat simmer for 2.5 to 3 hours until tender. Add the green beans 10 minutes before the end.
- For the crispy potatoes, preheat the oven to 220 degrees (electric) or 200 degrees (fan). Scrub the baby potatoes clean and cut them into pieces. Place them in a roasting pan and mix in some olive oil. Bake them in the preheated oven for 40 to 45 minutes. Turn them over once halfway through.
