Caramelized cabbage with garlic
Eintopf is a German dish that doubles as a first and second course. Eintopf is a thick soup simmered in water or broth. We made it with Brussels sprouts and were quite pleased with the result.
- head of white cabbage – about 1 kg
- garlic – 1 clove
- Butter
- sugar – 3 tbsp. l.
- boiled and smoked ham – 100 g
- cumin – 1 tbsp.
- small onions – 2 pcs.
- salt – to taste
- vegetable oil – 2 tbsp.
- apple cider vinegar – 3 tbsp.
- white wine – 100 ml
- Melt the sugar in a saucepan and heat until it turns brown. Pour in the vinegar and oil and cook for 2 minutes. Add the finely chopped onion and garlic and fry for 5 minutes.
- Remove the outer leaves from the cabbage and cut into narrow strips. Place in a saucepan, sprinkle with cumin, salt, and pepper, and cook, stirring, for 6 minutes. Pour in the wine and bake in an oven preheated to 180°C for 45 minutes.
- Cut the ham into cubes and fry in hot butter until golden brown, 8 minutes. Mix the cabbage with the ham.
