Hummus with Beef Tenderloin
3 cloves of garlic
- Juice of half a lemon
3 tablespoons of water
- ½ cup olive oil

Ingredients for Beef Tenderloin
- 400 gr. beef tenderloin – julienne

1 teaspoon of red pepper paste
- ½ cup of water

For the hummus: Add chickpeas, tahini, garlic, lemon juice, and water and blend. Add olive oil and continue blending. Add salt, pepper, and cumin to the blender and blend thoroughly. If the consistency is too thick, you can thin it with more water and olive oil.
For the potato crust: Place your pan on the stove and add sunflower oil, then heat it. Add the finger-cut potatoes to the heated oil and fry until golden brown.
For the beef tenderloin: Place your pan on the stove and heat it. Cut the tenderloin into julienne strips and sprinkle with salt. Place the salted sides of the prepared tenderloin strips in the pan. Once the tenderloin strips have browned, add salt to the unsalted sides and cook. Add olive oil to the cooked meat, stir once, and remove from the heat.
For the tomato sauce: Place your saucepan on the stove and heat it. Add the tomato paste and water and stir. Then, simmer until it reaches a sauce consistency.
To assemble: Spread the hummus on a serving plate. Arrange the fried potatoes on top. Place the prepared meat on top of the potatoes. Garnish the remaining hummus with paprika and parsley leaves. Drizzle the tomato sauce over the meat. Finally, sprinkle with dried mint and serve.
