Fried cheese in a corn crust
Pan-fried suluguni cheese is the perfect hot appetizer: quick to prepare, filling, and incredibly delicious. The key to this dish's success is good "raw materials." If you buy genuine brine-brine suluguni, the breadcrumbs will adhere perfectly to its slightly damp surface, and the cheese itself won't melt during frying. - eggs – 2 pcs.
- chopped parsley – 2 tbsp.
- vegetable oil for frying
- corn flour – 150 g
- Suluguni cheese – 250 g
- milk – 2 tbsp. l.
- flour – 5 tbsp.
- Cut the cheese into 2.5 x 2.5 cm cubes and roll them in flour. Shake off any excess flour.
- Beat the eggs with milk and add the parsley. Dip the cheese cubes in the egg mixture and then coat them in cornmeal. Pour about 2 cm of vegetable oil into a heavy-bottomed saucepan and bring to a boil. Add the cheese and deep-fry until golden brown. Remove with a slotted spoon and drain on paper towels. Garnish with parsley sprigs when serving.

Halloumi, a special cheese for frying, is not suitable for this recipe because it doesn't melt.
