Pumpkin recipe: Grilled pumpkin wedges with lentils
The well-known Hokkaido pumpkin, introduced to Europe from Japan, has a nutty, kernel-like flavor. The skin can be used without any problems (organic produce is best). It has a long shelf life.

- 600g Hokkaido pumpkin
- 7-8 tablespoons olive oil
- 1-2 tsp paprika powder
- Salt
- 3-4 peeled, crushed garlic cloves
- 3-4 sprigs of rosemary and thyme, roughly chopped
- 200g fresh goat cheese
- Juice of 1 lime
- 1 pomegranate
- 2 The Honey
- 100g yellow lentils
- 1 tsp Turmeric
- 200 ml vegetable broth
- 2-3 EL White Balsamic
- Cayenne pepper
- 100g roasted cashew nuts
- fresh coriander for sprinkling
Method · 45 min
- Wash the pumpkin, halve it and remove the seeds. Cut the halves into wedges and mix them in a large bowl with 4 tablespoons of oil, paprika powder, a little salt, garlic and herbs.
- Stir goat's milk cheese and lime juice until smooth.
- Halve the pomegranate. Remove the seeds from one half and juice the other. Simmer the pomegranate juice with honey until syrupy. Then stir in the seeds.
- Cook the lentils in vegetable broth with turmeric for about 5 minutes until al dente. Then drain and mix with the pomegranate mix, the remaining 3-4 tablespoons of olive oil and the vinegar, and season to taste with a small pinch of salt and cayenne pepper.
- Heat a grill pan on the stovetop. Place the pumpkin wedges cut-side down in the hot pan. Scatter over the thyme, rosemary, and garlic, then grill the vegetables for about 5 minutes on each side. Season with a little salt.
- Spread goat cheese onto a platter or several plates. Arrange the grilled pumpkin wedges on top and sprinkle with coarsely chopped cashews. Drizzle with pomegranate and lentil vinaigrette and serve sprinkled with coriander, if desired.
