Cheese and Spinach Muffins

- Milk
- flour – 250 g
- grated hard goat cheese – 250 g
- egg – 1 pc.

- baking powder – 1 tbsp.
- spinach – 100 g
- Wash the spinach thoroughly. Melt the butter in the milk over high heat. Add the spinach and bring to a boil. Remove from heat, let cool, then puree in a blender.
- Sift flour, baking powder, and salt into a large bowl. Add 50 g of cheese, cayenne pepper, and black pepper. Pour the milk-spinach puree into the flour mixture, add the egg, and mix well.
- Preheat oven to 180°C. Grease muffin tins with butter. Spread the batter halfway into the tins. Top with the remaining cheese and the remaining batter. Bake for 20–25 minutes, until the muffins have risen. Cool on a wire rack.
