Cod liver salad

Vinaigrette with dried or frozen seaweed. You can use any type of fish: chum salmon, pink salmon, hot-smoked cod, or canned salmon. What makes this vinaigrette special is the addition of salted red or green tomatoes and pickled cherries or lingonberries.

Ingredients · Servings 2
  • Boiled potatoes
  • Refined vegetable oil
  • Chicken egg (hard-boiled)
  • Lemon
  • Canned cod (liver)
  • Canned green peas
  • Salt
  • Onions
Method · 15 min
  1. Peel the boiled potatoes and onions, dice the potatoes, and chop the onions. Remove the cod liver from the can and cut into small pieces.
  2. Peel the eggs and separate the whites from the yolks. Crumble the yolks and combine them in a bowl with the liver, potatoes, onions, and green peas.
  3. Cut the lemon into wedges. Finely chop the egg whites. Drizzle the salad with vegetable oil and season with salt and pepper. Toss and divide among serving plates. Sprinkle with egg whites and garnish with lemon wedges. Garnish with dill sprigs.

Olivier salad with crayfish tails is unlike traditional salads. First and foremost, it features the most tender veal, which immediately sets the perfect tone. Next come the usual carrots, potatoes, eggs, and canned peas—the essential ingredients of Olivier. Mix them with the veal and dress with homemade (and absolutely homemade!) mayonnaise. This is truly crucial: it determines whether your salad will become the one served by millions of Russian cooks. And finally, the icing on the cake—the crayfish tails. They pair wonderfully with all the other ingredients, making it incredibly sophisticated. Therefore, Olivier salad with crayfish tails is ideal for a festive feast, such as New Year's.

A classic cod liver salad can be made for a holiday or just for fun, as you'll likely already have the ingredients at home or can buy them at the nearest store. Incidentally, this wasn't always the case! Ask your moms or grandmas, and they'll tell you that canned cod liver was a scarce commodity in Soviet times, so this salad was only prepared for special occasions. Nowadays, this dish might not seem particularly unusual, but it's certainly delicious and mouth-watering. A classic cod liver salad is very quick and easy to prepare, so much so that even a schoolchild can handle it.
