Two Peruvian brothers explore, reinterpret, and celebrate Italian cuisine from a foreign perspective. Manifesto 13 is their love letter to forgotten flavors. Manifesto 13 is the revealing new project created by brothers Nicholas and Mark Duncan, 27 and 24 years old, respectively.
A journey made with flavor

We wanted to offer our own perspective based on our experiences traveling through Italy.”
An outsider's perspective on a familiar kitchen
The Duncan brothers explain that their vision stems from the perspective of a foreigner arriving in a place and discovering its cuisine, exploring local recipes that are part of everyday Italian life but remain a mystery to the world today. A key figure in this journey has been chef Simone Nebbia, with whom Manifesto 13 was launched a year ago.
This new creation aims to tell the story of the world through taste, drawing on personal experiences and the lessons learned along a journey. It reflects the process of trying something new without judgment, reflecting on and understanding the reason behind each dish. Throughout this journey, the project's creators prioritize local suppliers, providing access to the finest local produce used in their menu items.
Flavors that cross borders
Through Manifesto 13, its founders did not intend a literal recreation of the dishes. Their intention, and what this project ultimately reflects, is the curiosity, the restlessness, and the wonderful experience that an unfamiliar gastronomy provides. The new textures and flavors, never before experienced from across borders, begin with a sense of disbelief in innovation and ultimately lead to a redefinition of Italian culinary art.
