Materials

  • 125 g butter (at room temperature)
  • Half a cup of vegetable oil
  • 1 egg
  • Half a teaspoon of salt
  • 1 bunch of parsley (finely chopped)
  • 2 cups of flour (add gradually)
  • 1 packet of baking powder

Alternative Suggestions for Parsley Cookie Recipe:

Dough and Fat Alternatives

  • Instead of butter, you can use margarine or a mixture of vegetable oils; the cookie's texture will change slightly, but the flavor will be preserved.
  • You can make more nutritious and lighter cookies by replacing all-purpose flour with whole wheat flour or oat flour.

Spice and Flavor Alternatives

  • Instead of black pepper, you can use red pepper flakes, chili flakes, or thyme; they're ideal for adding different flavors.
  • Instead of salt, sea salt or a small amount of cheese salt can be used.

Cheese and Garnish Alternatives

  • Instead of cheddar cheese, you can opt for white cheese, cottage cheese, or grated Parmesan.
  • You can sprinkle sesame seeds, nigella seeds, or poppy seeds on top of the cookies.

Parsley Alternatives

  • You can achieve a different flavor by using fresh dill, basil, or mint instead of parsley.
  • Dried herbs can be used, but they won't be as aromatic as fresh herbs.

How to Do It

  • Combine room temperature butter, vegetable oil, and eggs in a bowl. Mix well.
  • Add the finely chopped parsley, salt, and spices.
  • Add the baking powder and flour gradually, mixing until you obtain a soft dough.
  • Break off walnut-sized pieces of dough.
  • Gently press down with your hand to flatten the dough into a cookie shape.
  • Arrange the cookies on a baking sheet lined with parchment paper.
  • Preheat oven to 180°C (350°F).
  • Bake the cookies for 15-20 minutes, or until the tops are lightly browned.
  • Remove from the oven, let cool, and serve. Enjoy!
  • With Tea and Coffee: Parsley cookies are especially delicious with freshly brewed tea or coffee.
  • As an Appetizer or Meze: Thanks to its slightly salty taste, you can serve it at breakfast and brunch or in meze platters.
  • Elegance in Presentation: Arrange the cookies on a serving plate and sprinkle with some fresh parsley leaves or sesame seeds; it looks very elegant.
  • Snack Packs: You can put these in small paper bags to offer to your guests or carry them in your bag.
  • Serving Hot/Cold: Serve the cookies at room temperature; if freshly baked, let them cool briefly for a crispier texture.
  • Parsley Freshness: Use fresh, finely chopped parsley; dried parsley won't give the cookies enough flavor.
  • Dough Consistency: If the dough is too firm, the cookies will be hard; add vegetable oil little by little if necessary.
  • Spice Balance: Use black pepper or chili flakes sparingly; adding too much can overpower the flavor of the cookies.
  • Oven Temperature: Bake at 180°C; a higher temperature will cause the outside of the cookies to brown too quickly while the inside remains raw.
  • Cooling: Allow the cookies to cool completely after removing them from the oven; they can be brittle and crumble if hot.
  • Shaping: If you make the cookies the same size, the baking time will be uniform and the presentation will be more organized.
