Paulo Airaudo arrives in Venice with his new culinary temple: Da Lorenzo

In one of Venice's most authentic and least touristy corners, where canals meander between secret gardens and quiet alleyways, Da Lorenzo – Al Giardino Segreto has just opened its doors, the new gastronomic project of Argentine chef Paulo Airaudo, who has six Michelin stars.

Located within the NH Collection Grand Hotel Palazzo dei Dogi, a former noble residence, the restaurant blends the sophistication of contemporary haute cuisine with the palace's botanical history. Only 18 privileged diners per night will have access to this unique culinary experience, inspired by the flavors of the lagoon and infused with Airaudo's personal touch: technique, creativity, and respect for the ingredients.

The restaurant takes its name from the botanist Lorenzo Patarol, creator of the oldest herbarium held by the Natural History Museum of Venice. His legacy lives on in the hotel's Giardino Segreto, a 2,000 m² oasis overlooking Murano and San Michele, which preserves rare species and an atmosphere suspended in time.

Fine dining between history, art and hospitality

The NH Collection Grand Hotel Palazzo dei Dogi, home to this new gastronomic space, exudes Venetian history from every corner. Formerly a monastery, aristocratic residence, and embassy, ​​it now boasts 64 rooms decorated with Murano glass, a private dock, and the prestigious Presidential Suite, which has hosted personalities such as Sharon Stone and the Dalai Lama.

Completing the offering is La Voga bar, where classic cocktails are reinterpreted with views of an old rowing school.

Tasting menu with a Venetian soul

Da Lorenzo's offering revolves around two tasting menus—one seven courses and the other eleven—that pay homage to Venetian tradition, with Argentinian influences and international techniques. Highlights include dishes such as Sant'Erasmo violet artichoke consommé, beetroot casunziei, risi e bisi, and a surprising squid presented as a cannolo, while the longer menu culminates with duck cappelletti and a basil granita that adds a fresh, herbaceous touch.

A new culinary destination in Cannaregio

With Da Lorenzo – Al Giardino Segreto, the Cannaregio district—Venice's vibrant heart and the birthplace of the world's first Jewish ghetto—adds a new chapter to its history. Among alleyways adorned with Tintoretto's works and hidden courtyards, a new must-visit destination for lovers of fine dining has emerged.
