The secret to eternal youth? The unchanging Arlesian sun, a patio with a mascaron fountain, and the creative stamina of the trio Julia Mitton, Laura Vidal, and Harry Cummins, also at the helm of La Mercerie, Livingston, and Pétrin Couchette in Marseille…

Tasted that lunchtime: melon tagliatelle, tahini-almond sauce, black olive vinaigrette, and blackcurrant leaves; a cold pork loin pastrami, barbecued cucumber, spring pickles and gribiche sauce; then, a smoked chocolate ganache, cherries, hibiscus and puffed rice.

Prices: menus €40 (lunch; 3 courses) and €55 (dinner; 3 courses to share), wine pairings €20 (lunch) and €30 (dinner).
