Bodaajan burrito
Sriracha-flavored scrambled eggs wrapped in a burrito blanket and loaded with veggies make this the perfect breakfast for an active day!

- 2 eggs
- 2 tl srirachaa
- 50 g kale
- ½ cup (125 g) cherry tomatoes
- 50 g goat cheese
- oil
- 2 (whole grain) tortillas
- 1 small avocado
Method · 10 min
- Whisk together the eggs and sriracha. Remove the tough stems from the kale and chop it. Halve or slice the cherry tomatoes.
- Heat the oil in a pan and fry the kale for a few minutes until it softens, adding the cherry tomatoes towards the end. Crumble the goat cheese on top. Transfer the kale and tomato mixture to the other side of the pan, reduce the heat and add oil to the empty side. Pour the sriracha egg mixture into the empty side and leave undisturbed for 30 seconds. Gather the curdled egg mass from the edges to the centre and break it up with a wooden fork. Do not let the mixture brown.
- Peel and slice the avocado. Heat the tortillas in a dry, hot pan and fill with the sriracha mix, goat cheese and vegetable mixture and avocado slices. Wrap and enjoy immediately.
