Garlic Parmesan Smashed Potatoes

This Garlic Parmesan Smashed Potatoes recipe takes crispy potatoes to the next level. Baby golden potatoes are boiled until fork-tender, smashed to create plenty of crevices, and baked until perfectly golden and crunchy.

Ingredients
  • 1.5 lb baby golden potatoes
  • 4 cloves minced garlic (more or less based on personal preference)
  • 1/4 cup parmesan cheese
  • 1 tbsp parsley
  • 1 tsp garlic powder
  • 1/2 tsp salt (adjust to taste)
  • 1/2 tsp chicken bouillon powder (adjust to taste)
  • 1/2 tsp smoked paprika
  • 4 tbsp melted butter
  • olive oil
  • 3/4 cup sour cream
  • 1/4 cup heavy cream (more or less depending on desired consistency)
  • 1 tsp onion powder (adjust to personal preference)
  • 1 tbsp chives (adjust to personal preference)
Method
  1. Set your oven to 392°F (200°C) to preheat.
  2. Place your washed baby golden potatoes in a pot of heavily salted water.
  3. Bring to a boil and cook for 20-30 minutes or until the potatoes are fork-tender.
  4. Drain the potatoes and allow them to dry completely. Dry potatoes ensure they crisp up in the oven.
  5. Transfer the potatoes to a large bowl and drizzle generously with olive oil.
  6. Add minced garlic, parmesan, parsley, garlic powder, salt, smoked paprika, chicken bouillon powder, and melted butter. Mix thoroughly to coat every potato with the flavorful mixture.
  7. Line a baking sheet with parchment paper. Place the seasoned potatoes on the sheet and use the bottom of a glass or cup to gently smash each potato.

  9. Bake in the preheated oven for 20-30 minutes or until the potatoes are golden and crispy.
  10. While the potatoes are baking, make the dip by combining sour cream, heavy cream, onion powder, and chopped chives. Mix well and adjust seasonings to taste.
