Cheese, ham, and leek quiche

  • 7 leeks
  • 400 g flour
  • 200 g Butter
  • 1 tsp salt
  • 10 tablespoons of water
  • 400g cooked ham

  • 250g Gouda
  • 20 g Butter
  • 20 g butter for greasing

  1. Wash the leeks and cut them into thin rings. Then sauté them briefly in a pan with a little butter, so that the leeks are still slightly firm to the bite. Set the leeks aside to cool.
  2. Knead flour, butter, salt and water by hand to form a smooth dough that easily comes away from the sides of the bowl.
  3. Knead the dough vigorously and form it into a round ball.
  4. Grease the baking sheet with a little butter. Then cut the dough into two pieces and roll each one out with a rolling pin. Now place each rolled-out piece of dough onto the baking sheet and spread it out evenly with your hands.
  5. Cut the cooked ham into pieces and distribute it on the baking sheet along with the cooled leeks. Cover the dish and let it rest in the refrigerator for 1 hour.
  6. Preheat the oven to 160 degrees Celsius (325 degrees Fahrenheit). Whisk the eggs with the cream and a pinch of pepper in a bowl. Remove the baking sheet from the refrigerator and spread the Gouda cheese on it. Pour the egg and cream mixture onto the baking sheet and place the quiche in the preheated oven.
  7. Once the quiche is golden brown on both sides, it can be removed from the oven. Enjoy!

Quiche tastes best in summer with a fresh salad!
