Whole wheat pasta with shrimp in roasted tomato sauce

Wash and quarter the tomatoes. Peel and quarter the onions. Halve the garlic cloves and place everything in a small baking dish. Brush with olive oil and season with salt and pepper. Bake in the oven for about 25 minutes until soft.

Ingredients · Servings 4
  • 500 g Tomatoes
  • 1 small bulb of garlic
  • 1 white onion
  • 1 tbsp olive oil
  • pinch of salt
  • Prise Pfeffer
  • 400 g whole grain spaghetti
  • 300 g Shrimp
  • 1 small chili pepper
  • 30 g KLUTH pine nuts
  • 80 g grated Parmesan cheese
  • 1 handful of fresh basil
Method · 40 min
  1. Preheat oven to 200 degrees Celsius (fan-assisted).
  2. Wash and quarter the tomatoes. Peel and quarter the onions. Halve the garlic cloves lengthwise, then place everything in a small baking dish. Brush with olive oil and season with salt and pepper. Bake in the oven for about 25 minutes, or until soft.
  3. Then remove the garlic, squeeze the soft garlic out of its skin, add 5-6 large basil leaves and blend until creamy in a blender or with a hand blender.
  4. Cook whole wheat spaghetti according to the package instructions and drain, reserving some of the pasta water.
  5. Toast the pine nuts in a coated pan for 1-2 minutes. Remove and set aside.
  6. Finely chop the chili and sauté it with the shrimp in a pan for 2-3 minutes. Add the tomato sauce and half of the pine nuts and simmer for another 2-3 minutes. Then add the cooked spaghetti, stir well, and season with salt and pepper if needed. Optionally, add a little of the reserved pasta water.
  7. Before serving, refine with grated Parmesan cheese and top with some fresh basil and the remaining pine nuts.
  • Then remove the garlic, squeeze the softened garlic out of its skin, add 5-6 large basil leaves and blend until creamy in a blender or with an immersion blender. 1 handful of fresh basil.

  • Before serving, refine with grated Parmesan cheese and top with some fresh basil and the remaining pine nuts. 80 g grated Parmesan cheese.
