Patty Bistrò Roma, a small Mediterranean restaurant in Infernetto

Patty Bistrò Rome. Tel. 3490509445. A small restaurant serving generous meat and fish dishes, Patty Bistrò is located in Infernetto, a neighborhood in Rome overlooking the road that leads from the city center to the sea. It's the ideal stop for Romans strolling toward the coast on sunny Sundays.

It's an Italian bistro, serving Mediterranean cuisine with a nod to tradition. A restaurant seating just 30 people, it celebrated its first year of operation in 2019. The intimate and welcoming atmosphere was chosen and created by its chefs and sous chefs. The two are brothers Marco and Simone Pellegrino, who grew up with the same passion for cooking, the authentic kind that reminds them of home.

Born and raised in Rome, but their dishes tell something more about their origins. In their cuisine, it is possible to find typical products from southern Italy, specifically from Puglia and Calabria, which recall their parents' countries of origin. The braised octopus with turnip tops, 'nduja and burrata (16) is an example. Patty Bistrò represents their beginning. Marco, 29 years old, trained in the kitchens of hotels and restaurants in the capital and then moved to England and Australia for a few years, but he chose Rome to open his own restaurant with his younger brother. Simone, 19 years old, considered a promising talent in the sector, boasts experience in brigades of starred chefs in Rome and has participated in culinary conferences throughout Italy. The restaurant is made up of a single room in an industrial style with iron details and walls covered in white enamel tiles. The warm-light lamps, red furnishings and parquet make the atmosphere similar to that of a modern Parisian bistro. The tables are square and mostly for two, refined and elegant in a minimal mise en place.

The menu is simple but tastefully designed. What is surprising is the simplicity itself which, together with the seasonality of the food, makes the product tastier, more aromatic and above all healthier: with quality ingredients and the right "cooking key", very little is needed to make the dish a success. Like the fresh potato gnocchi, precious in the parmesan fondue, pumpkin cubes and truffle flakes (12). The use of modern techniques, such as the use of the blast chiller for vacuum preservation and low temperature cooking, contribute to adding new and particular values to tradition.

Appetizer or aperitif? There are several options to start an evening at the Bistrò: Fried anchovies (8) with aioli sauce, typical of the Mediterranean area made with garlic, olive oil and drops of lemon; Creamed cod crostini and Roman-style puntarelle (9); Platter of cold cuts and a selection of cheeses (18). Whatever your choice, everything can be accompanied by a sparkling wine or a good wine. The wine list offers a variety of 10 whites, 10 reds, a rosé and 3 sparkling wines. The selection has been curated directly by the chefs, who have chosen small Italian wineries with limited production. The staff can recommend the most suitable pairing.

Concluding on a high note is equally important. The desserts are inviting and unpredictable. New daily specials and traditional desserts are strictly homemade. The cheesecake (5) is Patty Bistrò's authentic dessert. The cake is the result of a secret recipe refined over the years by the restaurant's family.

Patty Bistrò, Via Umberto Giordano, 97 c — Open every evening for dinner and also for lunch on Sundays. Wednesday is the weekly day of rest. Facebook page.
