Find Comforting Indian Fusion Dishes Inside This Brighton Brewery
Chef Keith Sarasin — the founder and chef of pop-up restaurant the Farmer’s Dinner, who grew up in New Hampshire — has been immersing himself in the art of Indian food for decades.
What to order
- Indira’s dal ($13) is the recipe that launched Sarasin’s love of Indian food. Named after one of his early mentors, the slow-cooked lentil stew made with onions, green chiles, and ajwain (an herb similar to oregano) is flavorful but not overpoweringly spicy.
- For a street food spin, try the fried idli chaat ($15). The idlis (steamed rice cakes) are fried, coated in hand-ground dried chiles, and drizzled with a tamarind-ginger chutney. They’re served on top of creamy yogurt with fresh cilantro.
- Comfort food gets a kick in the Aatma burger ($19), an American smash burger seasoned with masala spices and house sauce, and paired with achari (pickled) onions and amul cheese, a popular Indian cheese with a similar flavor profile to American sliced cheese. Sarasin spent three months developing this recipe, and it’s quickly become a fan-favorite.
What to drink
On a chilly day, the house-made masala chai ($6) with thickened oat milk and toasted spices is like a warm hug. For something with a brighter, fresher taste, try the mango lassi ($9) with rose syrup for a creamy, tart, and floral combination.
