Cinnamon Brioche Star

FOR THE BRIOCHE BREAD

  • 200 ml whole milk
  • 1 teaspoon salt
  • 400 g Type 1 flour
  • 90 g Farina manitoba
  • 13 g Brewer's yeast
  • 50 g Sugar
  • 55 g Soft butter
  • Egg
  • Cinnamon powder
  • 30 g Melted butter
  • 50 g brown sugar
  • Yolk

In the mixer, mix the flour, yeast, sugar, and salt.

In a small bowl, beat the egg and add it while the mixer is still running. Add the softened butter.

Gradually add the milk. We'll see if we need to add more, depending on how much the flour absorbs, and adjust accordingly.

Once the dough is well combined, turn it out onto a floured surface and knead by hand for a few minutes until it forms a smooth dough.

Place it in a bowl and cover it with a cloth. Let it rise for at least 2 hours in a warm, cool place.

Once it has doubled in size, divide it into 4 loaves, and roll each one out with a rolling pin to give it a round shape.

Place the first disc on a sheet of baking paper placed on a baking tray.

Fill with a layer of melted butter, sprinkle with sugar, and cinnamon to taste. Repeat the process, layering all the discs. Don't brush the last one with butter!

Let's place a glass in the center, so as to have a reference point.

Using a knife, make as many cuts as needed to obtain 16 uniform wedges.

Take these wedges two at a time and twist them by rolling them up. When you're finished, pinch them together.

Remove the glass from the center, cover with a tea towel, and let it rise again for 30 minutes.

Brush with beaten egg yolk and bake at 180°C for 25-30 minutes!

Before serving, sprinkle with icing sugar!
