Indian pulled chicken from the BBQ
In the mood for something different on the barbecue? Then make this Indonesian pulled chicken on the BBQ! We serve the pulled chicken on a soft brioche bun with sweet and sour vegetables. A delicious combination of sweet, fresh, and spicy that is perfect for a summer barbecue.
Ingredients · Servings 4
- 700 gr kippendijfilet
- 1 rode peper
- 2 uien
- 1,5 cm verse gember
- 3 tenen knoflook
- 70 ml ketjap manis
- 100 ml bouillon (kip)
- 2 el citroensap
- 2 el ketchup
- 3 laurierblaadjes
- 1/2 tl nootmuskaat
- 2 kaneelstokjes
- 4 kruidnagels
- zout en peper
Method · 20 min
- Steek de barbecue aan tot een temperatuur van circa 180 graden.
- Snijd de rode peper, ui, gember (zonder schil) en knoflook heel fijn. Dit kun je ook met een keukenmachine doen.
- Prik de kruidnagels in de laurierblaadjes.
- Breng de kippendijfilet op smaak met zout en peper.
- Leg de kip op de barbecue en bak aan beide kanten goudbruin.
- Doe ondertussen een klein scheutje olie in een Dutch oven en bak hierin de ui, knoflook en rode peper.
- Voeg de kip toe aan de Dutch oven, samen met de rest van de ingredienten. Zet de deksel op de pan en laat 40 minuten op de barbecue pruttelen.
- Verwijder de laurierblaadjes en de kruidnagels.
- Trek daarna de kip uit elkaar met 2 vorken of gebruik een pureestamper.
- Serveer de Indische pulled kip met zoetzure groenten, op een brioche broodje.

- 700 g chicken thigh fillets
- 1 red pepper
- 2 onions
- 1.5cm fresh ginger
- 3 cloves of garlic
- 70 ml sweet ketjap
- 100 ml bouillon kip
- 2 tablespoons lemon juice
- 2. Ketchup
- 3 bay leaves
- 1/2 tsp nutmeg
- 2 cinnamon sticks
- 4 cloves
- salt and pepper
Preparation method:
- Light the barbecue to a temperature of approximately 180 degrees.
- Finely chop the red pepper, onion, ginger (peeled), and garlic. You can also do this with a food processor.
- Stick the cloves into the bay leaves.
- Season the chicken thigh fillets with salt and pepper.
- Place the chicken on the barbecue and grill until golden brown on both sides.
- Meanwhile, put a small splash of oil in a Dutch oven and fry the onion, garlic, and red pepper in it.
- Add the chicken to the Dutch oven, along with the rest of the ingredients. Put the lid on the pan and let it simmer on the barbecue for 40 minutes.
- Remove the bay leaves and cloves.
- Then shred the chicken with two forks or use a potato masher.
