Carbonara deviled eggs

Boil the eggs for 10 minutes until hard-boiled and place in ice water.

Ingredients · Servings 4 people
  • 6 eggs
  • 100 g bacon
  • 100 g Parmesan cheese
  • salt and pepper
Method · 20 min
  1. Boil the eggs for 10 minutes until hard-boiled and place in ice water.
  2. Grate the Parmesan cheese.
  3. Cut the guanciale into small cubes. Heat a frying pan. Fry the guanciale cubes over low heat until crispy. Scoop 1/3 into a small bowl and set aside.
  4. Peel the eggs. Halve them and scoop out the yolks into a bowl. Add the guanciale from the pan, including all the cooking fat.
  5. Add the Parmesan cheese as well and mix with a hand mixer until creamy. Season to taste with salt and pepper.

Grate the Parmesan cheese.

Cut the guanciale into small cubes. Heat a frying pan. Fry the guanciale cubes over low heat until crispy. Scoop 1/3 into a small bowl and set aside.
