deviled eggs
These deviled eggs with avocado are a fun twist on classic deviled eggs. I think most '90s kids grew up with deviled eggs as a birthday snack. Back then, it was innovative and special, alongside liver sausage and cheese cubes.
Ingredients · Servings 16
- 8 eggs
- 1 avocado
- Juice of half a lime
- 1 tbsp sour cream
- 1 clove of garlic
- 1 sprig of coriander
- Pinch of paprika
- Chili pepper and salt
Method · 30 min
- Boil the eggs for 10 minutes until hard-boiled. Shock them by rinsing the eggs under cold water.
- Peel the eggs and cut them in half lengthwise.
- Remove the egg yolk with a spoon and place it in the bowl of your food processor. Add the lime juice, sour cream, avocado, chili pepper and salt, paprika, and garlic. Blend until smooth.
- Put the mixture in a piping bag and pipe nice swirls onto the eggs. Sprinkle the deviled eggs with some paprika and finely chopped coriander.
