Pokébowl with vegan fish sticks

Ingredients · Servings 4 people
- 300 g whole grain rice
- 50 ml white vinegar
- 1 tbsp sugar
- 6 radishes
- 2 tablespoons extra virgin olive oil
- 360 g vegan cheese sticks
- 1 mango
- 2 avocados
- 1 cucumber
- 2 el teriyakisauce
- 4 the mayonnaise
- 200 g soybeans
Method · 25 min
- Cook the rice according to the instructions on the packaging.
- Bring 50 ml of water with the vinegar and sugar to a boil. Let the sugar dissolve while stirring and turn off the heat. Let cool slightly.
- Slice the radishes and place them in a small bowl. Pour the vinegar mixture over them and set aside.
- Heat the oil in a frying pan and fry the fish sticks for 10 minutes until cooked through on all sides.
- Peel the mango, cut the flesh from the pit, and into cubes.
- Halve the avocados, remove the pit, scoop the flesh out of the skin, and cut into strips.
- Peel the cucumber, halve it lengthwise, and cut into slices.
- Stir the teriyaki sauce into the mayonnaise. Drain the radishes.
- Divide the rice, radishes, fish sticks, cucumber, mango, avocado, and edamame among bowls. Spoon the teriyaki dressing over it.
