Green lentil salad

  • 4 cherry tomatoes (or a can of crushed tomatoes)
  • 2 Traditional long shallots U
  • 6 tablespoons olive oil
  • 6 tablespoons of balsamic vinegar
  • 2 teaspoons of honey
  • 2 pinches of curry

  1. Pour the green lentils into a saucepan and cover them generously with cold, unsalted water. Gently bring to a boil, then reduce the heat to medium and simmer for about 30 minutes, or according to the package directions. Keep an eye on them while they cook; the lentils should remain tender but still hold their shape, resulting in a pleasant, not mushy, salad.
  2. While the lentils are cooking, whisk together the balsamic vinegar and olive oil in a bowl until well combined. Add the honey, curry powder, salt, and pepper, then whisk again to thoroughly coat the lentils. The result is a vinaigrette that is both mild and subtly spicy, perfectly balanced, and will beautifully flavor the still-warm lentils.
  3. Peel the shallots and finely chop them so they blend easily into the salad without overpowering the other ingredients. Wash the tomatoes thoroughly, remove the stems if necessary, and then cut them into small, even pieces. If using cherry tomatoes, halve or quarter them depending on their size to better distribute their freshness throughout the salad.
  4. Once the lentils are cooked, drain them thoroughly and then quickly rinse them under cold running water to stop the cooking process and refresh them. Let them drain well to prevent excess water from diluting the dressing. This step helps keep the lentils firm, ideal for a flavorful salad that's crisp and pleasant to serve chilled.
  5. Place the slightly warm or cooled lentils in the bowl containing the vinaigrette, then mix thoroughly to coat them well. Add the chopped shallots and tomato pieces, then stir gently so as not to crush the vegetables. Taste and adjust the seasoning with salt, pepper, or curry powder if you prefer a stronger flavor.
  6. Chill the green lentil salad briefly if you want to serve it nice and cold, which enhances its summery and convivial feel. Just before serving, give it a final toss to distribute the dressing evenly. Then serve as a starter, side dish, or light main course, depending on the occasion and your mood.
