XXL Spaghetti Garofalo Pasta with Gorgonzola, Speck, Radicchio, and Walnuts

  • 320 g Spaghettone XXL Pasta Garofalo
  • 250 g Gorgonzola
  • 200 g Speck
  • 250 g Radicchio rosso
  • 2 tablespoons milk
  • Extra virgin olive oil
  • 50 g Night

Cut the radicchio and speck into strips.

In a pan, brown the speck with a drizzle of oil, then add the radicchio and cook for a couple of minutes.

Cook the Spaghettoni Gragnanesi XXL in plenty of boiling salted water.

Meanwhile, in a second pan, melt the gorgonzola with the milk.

When the pasta is ready, drain and pour in the melted gorgonzola, mix and then add some chopped walnuts and the speck sautéed in the pan with the radicchio.

Plate and, if you like, add a little more speck, radicchio and chopped walnuts on top.

The chef recommends:

You can substitute the gorgonzola with another cheese if you like, and if you don't like speck, leave it out. The dish will still be delicious!
