Procedure

Using a pastry cutter, cut out 12 puff pastry discs. Fill 6 of these discs with Condoro and mozzarella for the first version, Condoro, mozzarella, and black olives for the second version, and Condoro, mozzarella, and spicy salami for the third version.

Separate the egg white from the yolk and use the yolk to wet the edges of the filled discs. Cover with the remaining discs and use a fork to secure the edges.

Place the pizzas on a baking tray lined with baking paper and brush with egg yolk.

Bake in a preheated oven at 200° for about 15 minutes or until golden brown and puffed up.

Condoro Sauce from Grandma's Preserves

Made with fresh tomatoes from Emilia-Romagna and a delicate sauté of fresh vegetables (celery, carrots, onion), exactly like homemade tomato sauce.
