Arroz con pollo is a classic Peruvian dish, renowned for its exquisite flavor. Some people prefer it with papa a la huancaína, while others choose it with salsa criolla; either way, it's always delicious.
This dish has its roots in the preparation of duck and rice, emerging as an adaptation to satisfy the desire to eat duck and rice. Since duck meat tends to be more expensive, chicken, a more affordable alternative, is often substituted.
This dish incorporates chicken, an abundant source of protein, along with vegetables that provide significant amounts of vitamins, minerals, and antioxidants, thus contributing to the strengthening of our bodies. Below, I will present a simple recipe so you can enjoy this dish in the comfort of your own home. Let's begin!
INSTRUCTIONS
- Season the chicken pieces with salt, pepper and a packet of Doña Gusta® Chicken.
- In a pot, brown the chicken pieces with a drizzle of oil. Remove and set aside.
- In the same pot, prepare a seasoning with the onion, garlic, blended yellow chili pepper, salt, and pepper. Let it cook until it reaches the desired consistency.
- Add the blended cilantro and spinach. Cook for a few minutes while the excess water evaporates.
- Add the beer. Let the alcohol evaporate.
- Once most of the liquid has evaporated, add the water and return the chicken. Let it simmer for approximately 20 minutes, or until the chicken is cooked.
- Remove the chicken from the previous preparation and add the rice, peas, carrot, bell pepper, and corn. Adjust the salt. Bring to a boil, reduce heat, cover, and simmer the rice for approximately 20 minutes.
- Once the rice is ready and cooked, return the pieces to the pot, cover and let it rest before serving.
