- 2 egg whites
- 1 tablespoon of flour
- 1/4 cup of skim milk or light fresh milk
- ½ tablespoon of oil
- Salt and pepper

- For the filling, sauté the garlic and onion in oil. Stir in the water, flour, milk, and spinach. Mix well and let cool. Fold in the stiffly beaten egg whites; this will give the pie volume. Season with salt and pepper.
- Pour the filling into the mold. Arrange the fresh cheese in pieces and scatter the Parmesan. Cover with the reserved dough.
- Bake in a moderate oven (180°C or 356°F) for 45 minutes. Remove, let cool, and serve.
Serve with: 1 portion of green leaf salad seasoned with lemon and vinegar.
