Quiche with chicory and ham

In the mood for an easy meal from the oven? This chicory and ham quiche is highly recommended. Tasty and something different for a change. Ideal for a weeknight or lunch!

Ingredients · Servings 4
  • 5 plakjes bladerdeeg of 1 rol bladerdeeg
  • 3 eieren
  • 3 stronkjes witlof
  • 100 gr ham
  • 1 ui
  • 2 tenen knoflook
  • 125 ml kookroom
  • 75-100 gr geraspte kaas
  • 1 tl tijm
  • 1/2 tl nootmuskaat
  • snufje peper en zout
Method · 50 min
  1. Verwarm de oven voor op 180 graden.
  2. Laat evt. het bladerdeeg ontdooien en bekleed een quichevorm of ovenschaal met de plakjes bladerdeeg. Druk de naden goed aan.
  3. Snipper de ui en snijd de knoflook fijn. Snijd de witlof in stukjes en verwijder de harde kern.
  4. Giet een scheutje olie in een pan en bak de ui en knoflook. Voeg daarna de witlof toe en bak dit circa 5 minuten mee totdat de witlof iets zachter is. Voeg de tijm en een snufje peper en zout toe en meng dit goed door.
  5. Klop in een kom de eieren los met de kookroom. Voeg de nootmuskaat en nog een snufje peper en zout toe.
  6. Verdeel de witlof en ham over de bodem van de quiche. Schenk het eimengsel eroverheen en strooi de geraspte kaas erover.
  7. Bak de quiche in circa 30-35 minuten goudbruin en gaar.

Quiche with chicory and ham

  • 5 slices of puff pastry or 1 roll of puff pastry
  • 3 eggs
  • 3 heads of chicory
  • 100 g ham
  • 1 ui
  • 2 cloves of garlic
  • 125 ml cooking cream
  • 75-100 g grated cheese
  • 1 tsp thyme
  • 1/2 tsp nutmeg
  • pinch of salt and pepper

Preparation method:

  • Preheat the oven to 180 degrees.
  • If necessary, let the puff pastry thaw and line a quiche pan or oven dish with the slices of puff pastry. Press the seams down firmly.
  • Chop the onion and finely chop the garlic. Cut the chicory into pieces and remove the hard core.
  • Pour a splash of oil into a pan and sauté the onion and garlic. Then add the chicory and cook for about 5 minutes until slightly softened. Add the thyme and a pinch of salt and pepper, and mix well.
  • In a bowl, whisk the eggs with the cooking cream. Add the nutmeg and another pinch of salt and pepper.
  • Distribute the chicory and ham over the bottom of the quiche. Pour the egg mixture over it and sprinkle the grated cheese on top.
  • Bake the quiche for approximately 30-35 minutes until golden brown and cooked through.
