Spanish risotto with chorizo and chicken
Este risotto español con pollo y chorizo está delicioso. La combinación de chorizo crujiente, pollo, pimiento y tomate es realmente exquisita. ¡Perfecto para una velada acogedora cuando te apetece un plato reconfortante con un toque español!

- 1 chorizo worst
- 300 gr kippendijfilet stukjes
- 1,5 tl kipkruiden
- 200 gr risottorijst
- 500 ml kippenbouillon
- 200 ml tomaten frito
- 1 ui
- 2 paprika’s
- 1 rode peper
- 2 tenen knoflook
- snufje peper en zout
- 1,5 tl paprikapoeder
Método · 35 min
- Snijd de chorizo in kleine stukjes.
- Bak de chorizo in een diepe hapjespan, zonder olie, totdat de stukjes krokant zijn. Schep de chorizo uit de pan en laat uitlekken op een bord met keukenpapier.
- Breng de kippendijfilet op smaak met de kipkruiden. Bak de kipstukjes in het achtergebleven vet van de chorizo rondom bruin.
- Snipper ondertussen de ui, snijd de paprika’s in stukjes en snijd de rode peper fijn. Verwijder eventueel de zaadjes als je het gerecht iets minder pittig wilt maken. Snijd ook de knoflook fijn.
- Voeg de ui, paprika, rode peper, uitgeperste knoflook en paprikapoeder toe aan de kip en bak dit 3-4 minuten mee.
- Voeg de risottorijst toe en bak de rijst 1 minuut mee, totdat de korrels een beetje glazig worden.
- Voeg de tomaten frito toe en roer alles goed door elkaar.
- Voeg daarna beetje voor beetje de kippenbouillon toe. Voeg pas een nieuwe scheut bouillon toe als de vorige bijna is opgenomen. Blijf regelmatig roeren.
- Ga zo door totdat de risottorijst gaar is. Dit duurt ongeveer 20-25 minuten. Voeg eventueel een extra scheutje water of bouillon toe als de rijst nog niet gaar is.
- Schep de Spaanse risotto op borden en verdeel de krokante chorizo eroverheen.

Spanish risotto with chorizo and chicken
- 1 chorizo worst
- 300 g chicken thigh fillet pieces
- 1,5 tl kipkruiden
- 200 gr risottorijst
- 500 ml chicken stock
- 200 ml fried tomato
- 1 ui
- 2 bell peppers
- 1 red pepper
- 2 cloves of garlic
- pinch of salt and pepper
- 1.5 tsp paprika powder
Preparation method:
- Cut the chorizo into small pieces.
- Fry the chorizo in a deep sauté pan, without oil, until the pieces are crispy. Remove the chorizo from the pan and let it drain on a plate lined with paper towels.
- Season the chicken thigh fillets with the chicken seasoning. Fry the chicken pieces in the remaining chorizo fat until browned on all sides.
- Meanwhile, finely chop the onion, cut the bell peppers into pieces, and finely chop the red chili. Remove the seeds if you want to make the dish slightly less spicy. Also finely chop the garlic.
- Add the onion, bell pepper, red chili, crushed garlic, and paprika to the chicken and cook for 3-4 minutes.
- Add the risotto rice and sauté for 1 minute, until the grains become slightly translucent.
- Add the tomato frito and stir everything together well.
- Next, add the chicken stock little by little. Only add a new splash of stock when the previous one has almost been absorbed. Keep stirring regularly.
- Continue until the risotto rice is cooked. This takes approximately 20-25 minutes. Add an extra splash of water or stock if the rice is not yet cooked.
- Spoon the Spanish risotto onto plates and sprinkle the crispy chorizo over it.
